Why do chefs sprinkle salt from high over the dish? I’ll tell you. When you season close to your dish, you’re going to get a very concentrated amount in small areas and end up with random bites of extra salty food. Instead, pinch some salt between your fingers and raise your arm up to head height or so. You’ll see that the salt more evenly distributes across the dish.
