My favourite pie is a classic strawberry rhubarb pie. I just love the balance of the sweet and tart. It also symbolizes the start of summer for me here in Eastern Canada. Strawberry Rhubarb Crumble

Strawberry rhubarb pie recipe: Preheat oven to 350F. Mix 4 cups rhubarb, 1 to 1 1/2 cups strawberries, 1 cup sugar, and 1/4 cup flour. Set aside. In a separate bowl mix 2 cups flour, 1 tsp. Salt, 1/2 cup oil, 1/4 cup water. Divide dough and roll each in between 2 pieces wax paper until very thin (makes for a light, flaky crust) Line pie dish with one dough crust, add filling. Top with second crust and cut excess dough from the edges. Crimp closed and add slashes in the top crust for ventilation.

Strawberry Rhubarb Pie Squraes

Make strawberry rhubarb jam with me from garden berries and rhubarb 🍓 !Ingredients:2 cups chopped strawberries2 cups chopped rhubarb6 Tbsp. Pectin1/4 cup lemon juice, fresh or bottledZest of 1 lemon4 1/2 - 5 cups sugarDirections:1. Wash and chop your strawberries and rhubarb. Add lemon juice and zest. 2. Add to a stock pot on medium heat, crushing with a potato masher. Add pectin and stir to combine. 3. Bring mixture to a boil over medium high heat, then add the sugar and stir until dissolved.
