But if you have a recipe that calls for a cup of whole milk, and all you have is evaporated milk, then you mix half a cup of evaporated milk with half a cup of water and use that. 2023年1月13日 · Yes, evaporated milk is what it says on the tin: milk from which much of the water has been evaporated. If you rehydrate it by stirring water back in, it should work like regular milk, at least well enough for baking. Check the ingredients list, though, and make sure there isn't a bunch of added sugar.

I suggest evaporated milk to allow for a similar viscosity, or a plant based milk such as soy or next-milk that won’t split in the heat. Greek plain yogurt @ 2% will work, but incorporate it off-heat (at the end)as it will certainly split (ugly, but still tasty).
