酱酒酿造过程具有用曲量大的特点,粮曲比接近1:1,高温大曲中营养物质和风味物质及其前体大量进入到酿酒阶段,进而影响基酒品质,故高温大曲物系是质量评价体系的重要组成部分。 此前的研究较少关注不同等级大曲非挥发性风味物质,尤其是蛋白质、肽和氨基酸等含氮物质的变化,且非挥发性风味物质对白酒酿造过程风味的影响暂不清晰。
