Concord grapes are used in seemingly every grape-flavored product and yet they don't typically appear in the produce aisle, so how are they different?

I’ll never say no to a peanut butter and grape jelly sandwich ... a translucent appearance and uniform texture. The fruit flavor is imparted into the jelly, but the actual fruit is discarded.
