Uchisar and the castle. you may need a couple of hours, however it is a great place to have as a base to explore the whole region. We stayed at Ansia Hotel at the base of the castle, highly recommended and owner speaks English and has also worked as a tour guide so is a wealth of useful information. By the way you can walk through pigeon valley from Uchisar to Goreme, a wonderful way to spend a Sunday afternoon.

It's called a castle but it's really a huge hill with trails and tunnels of course. Pretty sure it's accessible all day.
